As an aside to this, the 'scrumpy' cider in the West Country was made in open vats and many many wasps would drown in the mash. And rats would fall in the open tubs. When they started making cider in closed vats they found the taste was not right. To this day good-quality cider has bones and meat added to the mix to emulate the rats and wasps
