How do I get rid of the annoying clock/movingmap/objective view in flight?

The TAC toggles on and off with shift + t Thats the Radar Roundie thing on the left
The HUD toggles on/off with F5, that's the three clock things.

Loot at the WORKSHOP in the Sim. There is also a PDF of the keyboard commands under SUPPORT on the WOFF homepage.

Waldorf - Many things can be toggled on/off or altered. Regarding the PDF Jerbear mentioned, the latest version is in the sticky post in this forum here is a direct link:
