I have six games currently installed on my HD and this is the order that I play them...
1. F/A-18 PSF (my favorite to play and to watch playbacks)
2. USAF (so many features and such good looks, but not even playable without community mods)
3. F-22 Lightning III (stupid easy to play, not always so easy to win as you're often gang-jumped)
4. Falcon 4.0 + 108 (who doesn't love button pushing and learning the finer details?)
5. WWII Fighters (just getting into the prop sims, Mustang sounds awesome)
6. EAW (just bought it and haven't explored it yet)
Also F/A-18 OIF, but that's very temporary.
I should be getting my next rig soon and then I'll have these to play (already purchased)...

I'll then start upgrading my Falcon for looks (i.e. pay pits and tiles). I'll probably drop F-22 L3 at this time as I did JetFighter IV some time ago, and then start really exploring the new USAF add-on called Super Pro 9.2, especially for the F-117A tweaks (i.e. stealth factor) and missions. I still miss MicroProse's Nighthawk F-117A Stealth Fighter 2.0 (my only flight sim until JetFighter IV, mid-2003).
The only sim that'll still be collecting dust in my closet at this time will be Lock On. I'm guessing that I'm two computers away from enjoying this one with maxed graphics and no tweaking. BTW, that's my criteria for any game. Maximum game graphics (video card settings excluded) and absolutely no tweaking (i.e. dumbing down graphics for better frame rates), EVER!
I'm also keeping an eye on any Total Air War and MiG Alley source code developments. I've never played these games but I have the demos and they seem fun enough. I'll pick up the current game if I come across either of them at EB Games, though.
And last but not least, when I get to the point in Falcon where I'm using the more realistic upgrades (while always using the most realistic settings, of course), I'll probably go ahead and purchase Jane's F/A-18, which itself has a possible source code development in the works.
So I'm all set.
But I'll tell you what, PSF ain't goin' nowhere.
