Battle of Britain II: Wings of Victory in itself is beginner friendly sim I think. You can adjust several parameters towards increased or more relaxed difficulty. Do bear in mind that this is an old sim released in 2005 and if you run Windows 10 or possibl 11, you should investigate thoroughly which patches to use above patch 2.06 as the sim will randomly and occasionally crash out of 3D if you apply the standard patches developed back in the Win XP/7 days.
You will also have the unique option of playing as RAF or Luftwaffe commander in a 2D tactical map.
I would say that the setup options are such that it can be made easy to get into, eg starting and managing engines without using the 'clickable cockpit'. The many included training missions are good - once you remember to release brakes so you don;t nose over on take off, and trim for landing so you're not rattling and juddering on the edge of a stall, desperately holding the stick back. BoB2 is (or at least seems) very realistic as a flying simulator so you need to fly your aircraft not just expect Star Wars tho there is a simpe FM which may make that aspect easier if that's what floats yer boat. Similarly, there are many included historical missions with 'air starts' which enable you to get straight into large-scale air combats. Moreover, these missions enable you to play from the standpoint of both sides and from different aircraft on each side.
As McGonigle has said, the star of the BoB2 show is the incredible dynamic campaign and that is a more complicated undertaking, necessarily. Even there, settings can simplify it.
The easy path is there to get into BoB2, and the depth is there once you're past beginner stage.

What version do you run 33lima ?
I have the G2 Games 'Limited Edition' soft plastic cased CD version (includes documentary CD and fold-out map and keycard sheets) patched to BDG 2.13 - I got a dual boot Win 7 to be able to run it without CTDs (my H/W isn't so new that Win 7 can't run on it).
Before, with Win 10, after a certain amount of now-forgotten fiddling with various settings, I was able to run 2.13 with occasional CTDs during a mission and CTDs most of the time exiting a mission. But I could play even the campaign, by sacrificing any impact the mission my squadron just flew would have had on the overall campaign, while accepting the frustration of having to re-boot afterwards. So I did get 2.13 running after a fashion with Win 10 but was so impressed by it as to go the trouble of setting up a dual boot system, just to avoid the hassle and play this great sim at its very best...
Early days yet and fingers crossed but I have just installed BoB II: WoV on a brand spanking new rig running Windows 11 using the Win 10 patch, and the instructions given at the end of This Post
