Your options are pretty limited if you just stick to one winged aircraft. Off the top of my head, for Germany, there is the Eindecker and late in the war, the Fokker EV. For the Allies, there is the Morane Parasol. All are relatively tricky to fly, with the easiest being the Morane. I may have missed one or two others, but I think that is about it.

Seems that multi-wing designs might make a comeback gents' -- see this link for more info. On a somewhat unrelated note, there also seems to be reinvigorated interest in supersonic commercial flight. Hope some of these projects take off (pun intended). I particularly like the modern take on the tri-wing design.

Supposedly the 1904 Horatio Phillips Multiplane made a nice hop of about 50 feet (no info. I could find regarding at what height the hop took place...probably no more than a few feet??). The 1904 model is probably the most elegant looking of the Phillips designs (see his 1893 and 1907 variants for even more convoluted contraptions). Phillips abandoned tinkering with flight after about 1907, although he did provide important advancements for airfoil design and airfoil curvatures.

If you want to see some weird, outrageous or downright scary attempts at flight, just watch the intro to that fantastic film "Those Magnificent Men In Their Flying Machines".
And just into the movie is a skit of Count Emilio Ponticelli attempting to fly the Philips Multi Wing pictured above.

I remember seeing that during my childhood (70's) probably worth another look.
