I'd love to know what those "ears" on the second one are good for.

Kinda nostalgic, seeing those kinds of engines and construction.

I believe they act as stabilizers. It's pretty stable, compared to the first one (which he has crashed and rebuilt about a dozen times in the last fifty years).

It's a pusher prop, forward canard design, those are vertical stabilizers.
