I always play Bethesda's games vanilla the first time or two. After that it's modding time. Mostly cosmetic, unofficial patches, and fixing things that bugged me in vanilla.
With mods a lot of what determines if I use it or not for a certain game is the install process. If I have to delve into renaming files, extracting ZIP files into different directories, modifying config files, blah, blah, blah then I usually don't bother. This is where the Vortex mod manager comes in, along with the Nexus website. It's not perfect, but sure does a good job of installing, enabling, and spotting conflicts between mods.

I like Skyrim but the writing is atrocious when compared to Morrowind, which has vastly superior books and conversations with others. On the other hand, Skyrim has a much better feel in combat and spells. It's a Bethesda game, and they're constantly trying to get more mainstream with successful franchises that are still a little more niche than they'd prefer (in the accounting office). As to writing, well, most RPG's are kinda crap. The player is always catapulted to the zenith of society in super short order, and Bethesda is probably the worst at it.

Bioware also did this with the Mass Effect games. But then again, would playing a fantasy RPG where you're just an ordinary peasant or playing a scifi RPG where you're some janitor on a space station be interesting for most people?
