The Albatross DII flies fine, but the Albatross DIII moves weirdly and the aircraft keeps going down no matter how much I pull up.

As a test, set auto mixture on in workshop and see if that helps.

Doesn't make much sense, maybe calibrate your joystick windows.

Make sure you haven't reset anything in the controllers, perhaps you duplicated axis being used - i.e. throttle is also being controlled (reduced) by another joystick or controller movement.
See the FAQ on only assigning controller axis that you need to use.
