Eating this NOW:


Low Carb Mexican Chicken Tortilla Soup

Ingredients:

· 1 tablespoon olive oil
· 1 white onion, diced
· 1 green pepper, diced
· 1 red pepper, diced
· fine sea salt and pepper (to taste)
· 2 cloves garlic, minced
· 1/2 teaspoon paprika
· 1 teaspoon cumin
· 1/2 teaspoon chili powder
· 2 cups crushed tomatoes
· 4 cups chicken broth
· 3 cups shredded, cooked chicken (grilled, baked)
· 2 avocados, sliced, for topping (optional)
· 1/4 cup fresh chopped cilantro (optional)

Directions:

1. Add olive oil to stockpot over medium heat. Add the onions and peppers and season liberally with salt and pepper.
2. Sauté the mixture for 3 or 4 minutes until the onion is translucent.
3. Add garlic, paprika, cumin, chili powder, and sauté for 2 or 3 more minutes.
4. Add crushed tomatoes and chicken broth and bring to a boil.
5. Turn down to a simmer and cook for 20 minutes.
6. Add the chicken and simmer for 15 more minutes.
7. Adjust the seasonings to taste and serve into bowls. Top with cilantro and avocado and enjoy.

There's a "Texas de Brazil" in Miami. I've only eaten there twice but the food is pretty good. Just make sure you go there with a big appetite because it's really not worth the cost if you just eat one plate of food and that's it.

Sorry, my mistake. The nursery rhyme is about peas porridge NOT teas & porridge. I need more coffee today it seems.

I love cornbread but I don't cook and it's hard to find really authentic Southern cornbread down here in Miami.

PM I do cook and use corn meal..Baking soda,baking powder ,Creamed corn and a big butted cast iron skillet and make my own,,Beats the drawers off the boxed stuff ..I've found if you like something best to make it yourself..I make a batch of chili and bread that lasts 3 days for me

Hamburger and fries.

Bought the ground beef from the butcher shop that custom grinds beef, a 87/13 blend of sirloin, round and chuck, and made the burger patties myself, each one about 6 oz.
