Most of the modern fight movies do not have very good fight scenes. I think it is mostly due to the fact that they cut at each hit vs actually filming people fighting. Some of the older movies has some really good fight scenes though.
There are however exceptions; I always liked the way they did it in the Bourne films - shaky camera, but no excessive cutting. I suppose, we can dispense of the old adage that no serious fight lasts longer than 20 seconds; after all these are top killers fighting each other, so it may take a bit longer to find a chink in the defense. I especially like the improvisation, whether it's the pen in the Paris apartment (1st film), or the rolled-up news magazine as a short stick in the 2nd:

The battle/fight scenes in "Last Samurai" are indeed great. What really made the film special to me was Ken Watanabe's tour de force performance. He was fantastic.

The Hit Girl scene at Rassul's in the first Kick A$$ movie has got to be one of the most unexpected approaches to a fight scene based simply on the fact that she was a little girl.
