DS9 is the best Star Trek, period.
Having just watched B5 through I would rank them very closely together, hard to say which is best overall.

B5 had the better story and better characters IMO, DS9 looks better (much bigger budget per episode, massive improvements in CGI). But, as F4U just wrote, they both rank pretty high up there. The Expanse and the new BSG are of course another dramatic step up in visual quality, and I simply like grungy tech environments better than the "Apple style" of the Star Trek universe. +1 As for DS9 and B5, there are so many urban legends out there concerning who ripped off who creatively since it is quite interesting that two shows with very similar premises started airing on tv at roughly the same time.

HD Nana Visitor and Terry Farrell where do I sign up? It's a great series and will say that the series finale is great and kind of bleak for a ST series.

Yeah, both B5 and DS9 have their strengths and weaknesses. DS9 was more "traditional trek", as in mostly unconnected stories for the first 2-3 seasons. There was some red threads through them and I felt DS9 actually had character growth throughout that period (unlike TNG and such). Then it hit the ground running and delivered 4 great seasons with a strong overreaching arc. B5 was the same for a season and a half, and the last season (5) was weak compared to the rest. But the main arc for B5 was also extremely strong, with some amazing characters as well. I would have loved to see either series remastered in HD - but with the master tapes of B5 long gone, along with the rendering originals it is a pipedream. a big F U to Warner Bros for that

TNG was expensive to upgrade with then current tech, apparently it is much cheaper/ simpler/ easier to do now so the math should change.

I'm just so glad that Paramount did the remastering for ST: TOS. I have the remastered bluray sets for all three seasons and those episodes really look fantastic and the added CGI effects were done very well.

Money, and I think Paramount hates the old Treks. When they came out with the DS9 Documentary What We Left Behind they showed off a couple redone scenes and said if people liked it, they'd consider doing the whole series. That was a few years ago now though.
Those clips look great. Someone needs to find out if Musk likes the old Star Treks . . .
