It's about 98% done now. Some minor issues with the left front quarter panel and hood. The electrical harness needs to be replaced and a new paint job.

That's remarkable. I was in the resto hobby (muscle cars) for twenty years. My username here is from the 455 bored .030" over that is in my '70 convertible.
You did well by getting a car that was 'all there'. Easier to restore and much cheaper. More money up front but cheaper by the time the project is done.

Old school all the way. I've restored two VW Bugs. Both back to original condition (well, upgraded to a 12v system). Original condition, for me, always.

Upgrading a Bug to 12v isn't really a deviation, as later ones had them and there's not that much difference.
On the GTO - going to build your own wiring harness, going after market, or the pull-a-part (and pray) route?
Since it's all about me, a VW Bug story:
When I made Corporal, it was brought to my attention that I didn't own a car, and that every NCO should have one in case they have to carry one of their troops somewhere.
So I made the long walk down Tacoma Way and found a '67 Bug that was in serviceable, but sad, shape. Mechanically she was meh, there were smallish dents in all four corner panels and the hood, and the floor pan had some rust. But the frame was solid and the doors just fine. Most of the knobs were missing for some reason as well, and the original interior had seen better days. The carb was way out of adjustment and she started rough and ran terrible. The front bumper was speckled with rust, but true! The tires had flat spots on them from sitting, but the rims were original. All the glass was original and in great shape.
I gave the man four hundred dollars cash for it, and drove it off.
My troops had great fun with that bug, adding my name to the windshield, bumper numbers, and occasionally picking it up and moving it around the parking lot. I put new tires on, replaced most of the knobs with facsimiles of the originals, adjusted the carb and the valves, and she ran well.
The Great California Migration to the Seattle area was reaching its peak, and one day coming out of a restaurant a guy was leaning up against it.
"I saw you drive up in it," he smiled, "sounds good." "Yeah, she's not much to look at, but she's a nice little bug." "I went over her while you were inside. Ever think about selling it?" "I dunno, nobody ever offered to buy it." "Two grand." "Huh?" "Two grand, cash." "Mister, you just bought a bug!"
Like a dumbass, I actually had the title in the glove box (and no, I never locked the doors on it), signed it over, pocketed the cash, and called to have someone come fetch me.
Probably the easiest restoration one could hope for, but I think he bought it for some sentimental reason.

Going to a 12v was just swapping out the flywheel, transmission case, generator-alternator, battery, starter, windshield wiper motor. Pretty simple really.
