it's Iowa because I have interests there and connections going back over 10 years (and is a mutual choice of ours); and yes we do plan to get married. Iowa has a very reasonable cost of living which I'm sure you'll find very nice since you are coming from the UK!

Start documenting your relationship now, photo's of you being together, all the various physical proof's you have a legit relationship like ticket receipts, your going to need it. Do it as far back as you can, if you have a strong evident relationship your already half done, you don't have to get married right now, she can apply for a fiancee visa, do it ASAP, because they will make you wait. You can always change your mind, but if you do decide to go this route six months from now, you will only have a six month wait remaining, and not burn eighteen. It takes about a year on average to get a K-1 visa in hand, don't make it longer by delay. Once your married they'll get you a work approved green card real quick, assuming you have a clean record. Most people drag out the process by making it far more complex than it is and not following the written instructions to the letter. They pretty much give you a checklist of whats needed and when, just complete it by the numbers quick as possible. If you were to marry now, they will make the K-3 slower and more painful to process, so stick with the K1. https://www.uscis.gov/family/k-1-process-step-step Been there, done that.

Oh, to double down on Nodak's comments: the paperwork is the real vetting process, IMHO, when dealing with our government where you want something from them.
The forms must be completed EXACTLY as the instructions say. This is the German contribution to the American melting pot. So on some forms it will say write name First, Middle, Last on the top, but Last, First, Middle Initial (MI) in the middle, and First, Middle, Last at the bottom. Did you put a middle initial instead of your full middle name on the bottom? Oh, well, add three weeks before they return it with a note saying "incorrectly completed" with no notation on what was done wrong. Then send it back in to be put back on the bottom of the pile.
Heck, some British reporters were refused admittance to hear our President because they couldn't follow the indicated format for the current date in a block.
My Repairman's Certificate application to the FAA for my Nieuport was returned because the additional instructions said to write my driver's license number, state, and date of expiration in the open remarks area, and I stupidly put it down as state, number, and date of expiration.
So don't take it personally.
