Your CPU may be holding you back a little running at its base clock of 3.6ghz. WOFF as you likely know, runs best at higher clock speeds and doesn't care about multiple cores. The i7-6850 (K or X?), while not the greatest overclocker out here, should still get to 4.2 or higher with some water cooling if you're so inclined. I've a similar rig to yours but with a different CPU and vastly inferior video card. I'm running maxed settings stutter-free 75fps with an i5-6600k at 4.6ghz, same 16gb ram, and a vastly inferior Video Card - GTX 760 to your killer 1080 - so it can be done.
