Chinese-American food is the accurate label, as would be Italian-American food.

Likewise, if you go to Florence and eat at a McDonald's, you're eating American-Italian food, not American food.

twas an old one from "Qing" period the last feudal dynasty. The rulers, race "Man"... Genghis Khan descendents, were nomads and ate these stuff. The "Han" race had already developed farming with better access to fresh meat so was less inclined to eat the innards. ("Han" the more advanced farming race was somehow defeated by "Man"). But twas also food for commoners... invented by the King's cook the dish for the king was made just with pork. the commoners couldn't afford that so swapped it. Nowadayz only to be found in urban old Beijing which was also the feudal capital so, not a wide spread food. but pig intestine is indeed a common ingredient.. just gotta order it in more upscale places or better cook it myself.

My Chinese friends knew the best restaurants in town (serving Chinese food). It was delicious, better than the restaurants in my home country. I haven't visited Beijing yet.

My Chinese landlord did teach me how to cook salmon or any fish in general.

the culture heritage is very rich, even for a non-local non-culture/history buff like me, it is fascinating.

but atm the smog kills everything. depending on how far away and how much free time.. well, i can't really recommend a hefty trip solely for touring's sake, hmm grunt
