I have seen 15 mile per hour winds flip a plane the size of a PE2, so I know its possible especially why they tie down the planes.

Just to clarify, is there an "official" set of settings for approach and landing in the LaGG? There seems to be a wide variety of techniques in use for this, some of which seem to work for some people but not for others?

Downwind; Altitude, IAS, flaps, gear? (Also RPM settings)
Base; Alt, IAS, Glide Slope, flaps?
Final; Alt, IAS, GS, flaps?
Flare and Touchdown?

I do understand that there can be some variation, because of wind.

How are folks setting up there stick sensitivity in game?

I have Chuck's Guide and was starting by trying to follow that, as well as Requiem's video, but it's just not working for me so far.

"Indicated stall speed in flight configuration: 163..189 km/h
Indicated stall speed in takeoff/landing configuration: 138..168 km/h
Stall angle of attack in landing configuration: 18 °"

HAN (dev) recipe - so "official":

Unzip it to data\tracks folder.

Tips:
Final approach with full flaps and zero-throttle at very steep descent angle.
Final approach speed is 210..215 km/h. Glideslope angle should be choosen to keep this speed with zero-throttle.
Aim your aircraft in 100m before runway start.
Pull stick for landing smoothly but surely until horizon will not put on landing angle position on canopy frame.
You should know how horizon is pointed on canopy frame on landing angle. This can be seen on runway before flight.
Look on ground while landing. Feel it.
After touchdown don't brake - continue rolling until it's ~100km/h.
Keep rolling direction by strict and deliberated rudder movements.
To keep direction - you need to look far away forward on something like tree or building. Look how this tree is pointing on your canopy frame. This will allow you to see and control very small course deviations.
When it's 100 km/h - hold down your brakes, continue to keep direction.

One other thing I do find the planes abit twitchy. How do I stop a slight stick movement causing a sudden plane movement. I'm mainly flying the Bf109 F and G.

Personally I like to dampen the curves, I change the pitch sensitivity to 50% but that is fairly extreme and mainly for flying the 190, also the rudder but not the roll.

Come and have a fly with us sometime if you like we tend to fly the 110 a lot but I've flown the 109 and 190 in sims since IL2 in 2002.
