A tank sim set in WW2 that concentrates on Kampfgruppe combined arms actions at platoon to company level. Think about a mix of Panzer Elite and Combat Mission with a dynamic campaign and squad management.

Oh yeah and there needs to be a mission where you graffiti Romanes eunt domus sorry, Romani ite domum all over Caesar's villa. Another game I'd like to see is a flight sim set in the 1930s. Flying boats, biplanes maybe a few of the then latest fighter planes like the 109 and Spitfire. Period cities with accurate landmarks. Career mode where you start with a biplane in the American midwest and work your way up to a global aerial empire. (Then WWII comes along and it's off to join the RAF, or Luftwaffe for those so inclined...)

I'd second a new Destroyer Command, Pacific Fighters or PAW. A Task Force 1942 and WWI Jutland type naval game (based off of the Software Sorcery Jutland game). A bomber game like B-17 II TM8th (except finished) that uses the B-17, B-24 and Lancaster with a supporting cast of user playable fighters.
For Fantasy/RPG/FPS type games I'd like to see an open world Metro 2033/Last Light, Aliens vs Colonial Marines, Last of Us and Red Dead Redemption, Resident Evil 2 and 3.

In addition to the plenty of great ideas yet:
License Far Cry 4 engine and built a proper STALKER v2.0 on it. Full open world, more focus on survival, high-end GFX, intelligent and diverse monsters and player faction/AI relations. Or maybe the same with the Metro 2033 universe - basically the post-apocalyptic shooter to end all others. Fallout4 will do okay here, but it's going to be too "nice and funny" in my early opinion...
License RF2 engine (or AC) and build a proper Grand Prix Legends sequel. All historic tracks and historic teams/drivers, career mode from 1960 to 1970. As an addon, there will be Endurance Racing within the same decade (Le Mans) with proper team management, a bit of optional R&D and AI teammates so you can actually do 24h.

Another thing I'd like to do. Even set it in the 1940-50s and base it around the Tunguska incident. More bolt action rifles. Would make monsters a bit more scarey and harder to kill. Some SMGs, semi auto rifles, and very rare/expensive battle/assault rifles (FN FAL, G3, AK-47). And make acquiring magazines a feature to.

Speaking of using the Far Cry engine, I think a remake of FC2 without checkpoints and malaria would be awesome. Add a more 'dynamic' world. Factions doing patrols, changing territories, more mission types etc.

Well, STALKER takes place decades after the Chernobyl incident, having a game take places decades after Tunguska makes sense as well. Plus the weapons in the 40s and 50s are far better for a game than 1908's...

New idea. World War 1/2 era battleship game.
Using a modular system you design and build battleships, cruisers and destroyers and then fight it out in 3D, mix of direct control of your ship and guns as well as a degree of control over the fleet as a whole. Compromise between protection, firepower and speed. Of course you should also be allowed to make completely impractical designs, such as light cruiser that capsizes because of her 18-inch guns!
Of course there'd be historical presets for ship designs, tactics and battles such as Jutland and Surigao Strait.
Mostly I just want my own battleship. All those videos of World of Warships have sparked my desire for some naval combat.
