Same can be said about small arms and scopes. Attach a digital imaging screen/scope that is stable and won't loose zero. Then zero it in like any other scope. Tie done down, shoot, adjust weapon until it is hitting where you want it.

This is a rather terrible set up because the top sight is so high, but push comes to shove it will work as long as it is zeroed:

Apply the same concept to an RC helicopter and gun. Every fighter aircraft has massive off center bore-axis to, yet sighting systems were developed.

None of what you said is relevant. I'm talking about the fact that with a weight of a handful of pounds the slightest gust of wind can make it move between the time you aim and the command to fire reaches it. It's not dissimilar to having someone standing right next to you on the firing range and deciding to whack you in the arm just as you pull the trigger, except you'd have to a total idiot to do that on a firing range but the wind isn't intelligent.
Fighter aircraft and helicopters are heavy and move far less for a given gust, but even they experience issues in turbulence. But for a little thing like that turbulence is anything that can blow your napkin over on a picnic.
