Thanks Legend, I'll ask the wife when she comes in.
In Scotland we used to put a little vinegar in with the venison when cooking it, it helps with the flavour and also helps make it a bit more tender.

Thanks to this thread it jogged my memory as I had to go and get some turkey carcases out the freezer to make vol au vent

Don't care for meat pies, either, Jedi...make it into a steak or a stew, not a pastry.

Lamb is ridiculously expensive here, too. I spoke to the butcher and he said that since the US mutton market is such that they don't have processing plants for it, all of our commercial lamb is imported, mostly from Australia.

Never been much of a fan of lamb.

I spent eight months down in the Falklands in 2007 and pretty much all of the meat on board was locally purchased lamb. We'd have lamb at least three times every week. It doesn't help either that our ships always buy the cheapest, lowest quality cuts of meat as well, so when we do have lamb it's always got loads of fat on it and just not very nice at all.

Never have lamb when I'm on leave. After 2007 I can't stand the stuff any more.

Oh well, some shredded lamb meat between two halves of pita bread with a lot of garlic sauce, chili sauce and maybe some jalapeno peppers, olives and onion rings is always good. Especially after drinking too much beer but before going home again.


There is a theory which states that if ever anyone discovers exactly what the universe is for it will instantly disappear and be replaced by something even more inexplicable.
There is another theory which states that this has already happened.

After 2 years I will be going back to Scotland for a holiday next month, my first day back I will have 2 of the pies covered in Heinz Baked Beans for lunch, then fish and chips for dinner.

From posts in this thread, now I know why it is considered that the savings on the Health Service budget if Scotland leaves the U.K. will far outway any other Scotish input into the Union. smile

these pies were sold at the Pie Shop at the top of Angel Place, but I am not sure if it is still there though, so I won't send you on a wild goose chase like I did with the U.S. sweets!

I used to make them for sale in the bar on a Saturday, I would mince the trimmings off the sirloin and mix in some herbs and spices and use that as a filling, I used mashed potato as the topping instead of the pastry lid. I could not make enough of them to satisfy demand readytoeat

I'm trying to think which one you mean,I'll pop down and have a look soon. I've plenty of time on my hands at the moment. I could just do what I do when I need a genuine Cornish Pastie and order them online I suppose.

For best result stick it inside a butterred Morton's roll. Don't bother with the sauce, the grease will keep it nice and moist.

If that is what is universally known from the Western Isles to the Border Lands as a 'Scotch Pie' the meat involved is lamb or Mutton not beef.
