I always fly hardcore with paper maps, but that was achived only after many hours of flying and the deaths of many pilots.
But that may be not for everyone. Just have fun and play the way you want to, and are happy with.

Does anyone attempt to ONLY fly their entire campaign missions in cockpit mode? No outside views used at all? Yes, of course. If you are trying to replicate the experience of actually being a pilot in WW1, then must fly the whole mission from the cockpit. You must see only what a real pilot would see.

If you are trying to replicate the experience of actually being a pilot in WW1, then must fly the whole mission from the cockpit. You must see only what a real pilot would see. And you should really be sitting in your freezer while doing so...with a 100 mph fan hitting you in the face.

I don't use any aids at all, as well. Just now deciding to see if I can fly cockpit only mode with any success. Good to read that others are flying WOFF this way

My 2 cents....
DISCLAIMER: this represents my view on things and I know the OP as well as others are probably old timers and veterans at flying sims in general. So, take my reasoning with a grain of salt....
I love WOFF a LOT as a GAME. I like ARMA as a GAME. I like Skyrim as a GAME, etc....
It might already be obvious, but you'll never get the actual experience of a WW1 pilot sitting comfortably in your chair sipping your favorite drink while at the same time hearing your spouse yelling at you across the room and kids bumping into you.
So, knowing this, it makes sense to play WOFF with enough aids going on to help you out, but not too much so that it keeps that challenge going and adrenaline rushing.
Some will make their challenge by turning everything off... gluttens for punishment (just kidding about the name, of course). Others will need some aids due to personal reasons, but retain the same level of challenge during their gameplay as the gluttens.
So, in short, it's down to what you want as a challenge and WOFF gives you all the tools to mix and match different preferences. My advice would be to give QC a go with different aides active and try everything out by yourself, when you find your sweet spot, then that's the best way to play.

No outside view (apart to enjoy the skin or scenery) paper maps,only occasional labels,no autopilot nor time accel. Missions paused of course depending on real life necessity.
