So, I'd like to get 2 tripods to use for my joystick and throttle since it gets kind of uncomfortable reaching up and out with them on my desk after a period of time.

The problem is, I can't seem to find a flat attachment for the tripod for the devices to sit on. Anyone know of anything or have a similar setup to what I'm thinking?

I'm thinking tripods would be a bit wobbly for a HOTAS. THIS may better suit your needs.

Yeah, I don't have the room for that unfortunately. I need something deploy-able so my wife doesn't kill me wink

Great link though, I'm bookmarking that!

I made two small tables for my first attempt at this, and the two tables were braced at the rear portion behind my seat for extra stability. See this thread for pics!

While a tripod may be okay for supporting something, it would be terrible once you introduce lateral movement/pressure.
