While waiting for the FC3 release, I found this nice mod for Far Cry 1 called The Delta Sector. The graphics are very nice, but a lot less colorful than the original game. Lots of visual effects implemented not found in FC. The AI seems to be more aware and aggressive, but their response time has been lowered. Three SP levels only, but lots of fun. Some bugs though (like the "stuck" machine gun sound on the first hideout).

I've always been interested. Do they give you much of a story in only 3 missions?

Not really. I think that these was more meant as a technology demo of what all the extended capabilities of the CryEngine could do than actual story driven missions.
