I have heard a lot of WWII guys say the reason they don't fly modern stuff is that it's too hard for them. They have a hard time with radar, missile...stuff like that.

It does bring up an interesting debate for sure. Naturally, modern jet pilots need to be very well educated in a wide variety of subjects in order to properly use the complex avionics and weapons systems but along with that comes a lot of automation and less physical stuff that the pilots need to worry about. Compare that to a WWI or WW2 pilot where they obviously lacked complex weapon systems and avionics but the actual physical flying skills required were more demanding. So in other words, pilots from all eras had to be on top of their game if they wanted to be effective.

In WWI, the pilots were more capable than the planes.
Today, the planes are more capable than the pilots.
In WWII, the pilot and the plane were pretty well matched.

Of course, other than the Super Hornet, F-22 and F-35, you could say pretty much EVERY plane is old. The others all first flew in the 1980s or earlier, so they're all a generation old or more.

I fly OFF, (Over Flanders Fields), regularly, but there is not an option for it, so I voted, MS CSF and other...
Also flying: Modded IL-2 (UP 3.0), Modded Strike Fighters 2 (merged) and Rise of Flight.

I mainly fly ThirdWire/SF2, but also fly LOFC2... but Aces High isn't listed and I have flown that one from 2000 until the present, so I guess subscription service sims just don't make the list? Now I own nearly every sim listed, but I almost never fly the others for various reasons such as IL-2 just doesn't cut it when I can enjoy Aces High for its superior FM.

The poll makes no claim about it including every single pc flight simulator ever made. Is Aces High the last remaining flight sim with a subscription service? The last one I knew about was Air Warrior.
