In a planeset containing only the aircraft which come with Iron Cross Edition, I find that only the S.E.5a and the Sopwith Camel are competitive on the Allied side. On the other side of the coin, the Fokker Dr.I is the only really competitive fighter on the Central side (again, in the aforementioned planeset). I guess the Fokker D.VII is all right, but it doesn't do nearly as well in my server as the Dr.I does.
As someone who primarily flies SPAD, I find it easy to kill the Albatross D.Va, almost as easy to kill the Pfalz III, a bit harder to kill the Fokker D.VII, and only the Fokker Dr.I is very difficult to kill. I can't do it at all in the SPAD, unless the Dr.I pilot either doesn't see it coming or else is inexperienced.
So, what usually happens on my dogfighting server with this planeset is that everyone on the Central side flies Fokker Dr.I, because none of the other aircraft are as good as it. And the only Allied aircraft which can consistently kill the Dr.I in a "fair fight" is the Sopwith Camel. So most of the Allied fliers choose that, or else die a lot. (Or both.)
