I think the Star Trek MMO and the upcoming Star Wars: The Old Republic is all there is now and in the near future. I guess they hey don't really count as sims though.

I dont consider eve a space sim. I've noticed that the term "space sim" seems throw off a lot of people. I assume you mean a game where you have a cockpit or bridge view of a ship during combat? In other words games like Klingon Academy, Tie Fighter and Freespace.

Why can't Lucas Arts make a revamped version of Tie Fighter or X-Wing!
Can you imagine how awesome 16 vs 16 would be flying the Deathstar trench run with modern technology? Have people manning turbolaser cannon stations as well? Sort of like Starwars Battlefront with a more simlike approach. Like an ARMA2 for starwars!
Snowspeeders vs ATATs, 2 people per speeder one firing the tow cable and navigation stuff....or have humans controlling Star Destroyers as well! Dear lord.
THAT is a dream game for me.

Look up Free Allegiance, some people kept the old MS Allegiance game going. I looked up this one. It looks very unique. I remember trying it 2 years ago for a brief time. At the time I had no idea how to play and wrote it off due to having no clue how to play. Reading about it now has me interested again. Does anyone here play this? Seems it has a very steep learning curve and I'm not sure I'd enjoy the journey towards proficiency, given its dated graphics and hardcore player base that will surely claim "pwnership". I've also been watching these.

I played it pretty heavily when the original game came out, I tried the free version later on but never spent the time to get back into it. It was a fantastic concept that was probably way before it's time. With a coordinated team it was a ridiculous amount of fun with people scouting, flying bombers and escorts and also having to keep a defense organized it was full on battle with command structure and everything. I imagine trying to get into it now would be tough because, as you said, the people left there are the hardcore that have been playing it for years and will probably shoot you down before you know what is happening.
