So what are some of the most ridiculous and eye-rolling and/or hilarious stunts you've seen in action movies? Here are the first 5 that came to my mind,
1. In "True Lies" the scene with Arnold piloting the Harrier and launching the missile with one of the terrorists hanging from it. "You're fired!".
2. In "Con Air", the ridiculously long plane crashing sequence near the end of the film.
3. In "Wanted" the scene where the young assassins car flips upside down and over the limousine where his target is sitting and he shoots him dead through the open sunroof.
4. In "Mission Impossible 2" where the two motocycles fly into the air and crash into each other but before the bikes collide, Tom Cruise and his arch nemesis both jump off their bikes and their bodies collide in mid-air!
5. In "Air Force One" the hilarious air to air sequence where an F-15 sacrifices itself by flying between Air Force One and a missile launched from a MiG-29.

Mission Impossible 1 (?) - the helicopter flying through the tunnel chasing the TGV.
BTW - the TGV uses catenary - the entire scene on the roof of the train isn't possible.
There is a theory which states that if ever anyone discovers exactly what the universe is for it will instantly disappear and be replaced by something even more inexplicable. There is another theory which states that this has already happened.

The Dark Knight truck flip. It always knocks me back into the real world. I have to spend a few seconds to get "in" the movie again especially with the gas from the "pneumatic pump" (IIRC?) not edited out.

Diehard 4.0 where he takes out the helicopter with the car. Ridiculous but cool.

I can't remember the name of the movie. But one guy jumps out of a plane with a parachute, the good guy says screw it and jumps out after him without a chute. He catches the bad guy in mid air, kicks his ass and then takes his chute off of him and then puts it on himself to land safely.

X-Man Origins: Wolverine, where he rips out the helo pilot trough the windshield. That was one pure "hell yes this is now an insane action movie plot" moment, in a good way...

Ah yes, then followed by the mandatory "tough guy hero turns around and walks away slowly and confidently from explosion" sequence.

The flying bus sequence from "Speed". Yeah, buses can do that..

Wasn't it in "The Rock" where they had that completely ridiculous SF chase scene complete with nun-dodging? And then the "abandoned mine under Alcatraz" temple of doom ripoff? What garbage.
