Got it yesterday, installed it today, wife is away for the weekend... *rubs hands in anticipation*

Have a question - how do I access realism options?

Just completed the first academy mission (Lt Jr Heinz Noobie).

Start a single player mission and adjust the realism options, then just go back to the academy and continue.
