The real Enterprise is actually three times the size of the one in the video but would still lose against a StarDestroyer.

What do you mean by "real" Enterprise? There were several models of the Constitution Class "Enterprise" starting from ST: TOS through the refit for ST: TMP to the updated Enterprise model that we first see at the end of Star Trek IV and then you move on to the TNG era ships like the Galaxy class Enterprise and then Sovereign class Enterprise.

Assuming that’s an Imperial-class Star Destroyer, it’s 1600m long. NCC-1701 is 288m long and NCC-1701D is 643m in length. Corellian corvettes like the Tantive IV are 150m in length, but the hangar bay seemed quite a bit bigger than the corvette as it was being tractored in. So I’d guess it’s probably possible for NCC-1701 to be captured by the Empire.

Technology-wise, the Federation leaves the Empire in the dust.
