while looking for some info on Lindenthal aerodrome for my DiD pilot, I came across this site that has over 500(!) pre-1914 aircraft. Not quite suitable for military operations, unfortunately:

It wouldn't be a combat simulator but you could have a fun little sim game where you fly Edwardian machines in pylon races, daring stunts and attempt to cross previously unflown seas/mountains.
