The maneuvers used by the F-8 pilot described in this video are relevant to your situation (Even though it is F-8 Corsairs vs MiG-17's the same basic principles apply)
https://youtu.be/runS2ytx18w?t=36m36sBasically every time you merge with an opponent like the Fokker DVII you want to make sure that your energy state (speed) is higher than his. in this way you can use that extra energy to
a) position yourself for a pass
b) extend away and reposition
Don't try and match his turn at slow speeds and keep your speed higher enough than his to disengage if things start going pear shaped. Done well you can repeatedly attack an enemy like the DVII at little or no risk to yourself.
At first you may spend a lot of time running away trying this but, just remember; like any dance, it's all about that rhythm!
