I've wondered this before as well. Enemy observers will often fire on you while they are plummeting on fire to the Earth below, so I don't know, try the ace trick I guess? Good luck!
The older I get, the more I realize I don't need to be Han, Luke or Leia. I'm just happy to be rebel scum...

From my experience I can only speculate that the gunner is fixated on one target which may be out of the firing arc, while others can pound him. The gunner doesn't change targets so easily, or quickly. This is why when attacking two-seaters I am usually the bait, knowing that the gunner will target me, since I'm usually in the lead. I will fly to one side and out of range distracting him, while the rest of my flight will make minced meat out of his plane without taking any hits. Perhaps the AI is doing the same thing? Distracting your gunner with one pilot, while the rest destroy it. As to the long bursts while the plane is banked or diving, I've experienced that as well. Typically they keep shooting in one long burst until their gun jams. The gunner loses his footing, while the plane is maneuvering wildly and his finger gets caught on the trigger. That's my explanation and I'm sticking to it.
