I've played em all: Steel Beasts, Arma, M1 Tank Platoon 2, Battlezone.

Which one should I start with? Are they all great? School me please.

Well if you want a tank 'sim' then it has to be Steel Armour Blaze of War. You only get a T-60 and M60A1 though. Their other titles are more RTS unless you go for the older Steel Fury: Kharkov 1942.

EV's are the Devils matchbox.

Yea, Steel Armour Blaze of War if you want tank sim and Graviteam Tactics Operation Star if you want a tactical RTS game.
