There can be only one way -

Put cheese, butter, Worcestershire sauce, mustard, flour and pepper into a saucepan.
Mix well and then add the beer, Guiness or milk to moisten. Do not make it too wet!!
Stir over a gentle heat until all is melted, and when it is a thickish paste, stop stirring, and swivel it around the saucepan, which it will do quite easily.
Leave to cool a little, and meanwhile toast the bread on one side only.
Spread the rarebit over the untoasted side and brown under a hot grill.

Welsh rarebit - enjoy people !

Too right Paul. My sister-in-law is Welsh and she makes me rarebit when I visit.It is great.Beats plain old cheese on toast any day.

If I have a 'grilled cheese' it's butter. Mayo? WTH?

You guys shouldn't knock it until you try it. I have had Mayo in the past. Because of the oil and egg in the Mayo, it is the most beautiful golden that you can't get with plain butter. A poor-mans Monte Cristo.

In this house everything... Eggs, toast, burritos get fried in olive oil and butter.

Yes, cheddar is the way to go for me.

If you want a little variety, you can also try Queso Blanco or Asadero Cheese (add hot sauce for a spicy grilled cheese and tomato soup, yummm), or you can try a very nice Norwegian melty cheese called Raclette.

With Raclette, you make your buttered toast, and then heat the top of the cheese block until it is soft. You then scrape the melted cheese with a knife over the toast.
