Thursday night mom made homemade chicken salad (off a rotisserie) in the middle of homegrown garden tomatoes (dad and I added artichoke hearts and a pickle slice)... Friday night I actually learned to cook a little (mom and wife coaching), simple baked catfish with pesto pasta and parmigiano reggiano... Last night was shrimp and spinach/veggies on top of orzo pasta, wet by a dry French wine... ^ Wife went blueberry picking again yesterday morning before the thunderstorms, being prepped to be frozen. ++++++++++ EVERYBODY is seeing a drop in their waistline size 'round here lately, however... Wife and father are now revolting against the chicken and seafood menu, they want red meat this evening (meh)! Soo... about to cook up gourmet hamburgers and blueberry pie for dessert (1/4 of the normal sugar, from Faith Ford's healthy Southern food cookbook)!

I forgot to take a pic of my favorite, a seafood pasta (whole wheat fettuccine w/shrimp and scallops [next time a clump of real crab meat]). The alfredo sauce was just a fraction of the calories/fat/sodium/etc. of restaurant style. Not the healthiest thing to eat but man, it was out of this world! Something to think about... That $24.00 salmon on the previous page was expensive Norwegian (vs. cheaper Chilean salmon [Costco sells both]), but it fed four adults twice (so $3.00/person entre). Add the side dishes and whatnot and it may not be cheaper than some fast food but a hell of allot cheaper than eating out in general! I can live with this way of eating. Also, those green pea crisps (while improved recently) are still processed junk food, but still a little better specs than your average baked potato chip. The ultimate would have been sweet potato fries from the oven, but ya gotta have a little junk every now and then (at least we think so).

It's been a while. I'm on my own today, rummaging through the fridge because I'm not in the mood for canned seafood today. Hmm...what can I make? Something simple... Chopped Breast from Costco Rotisserie Chicken. Mushrooms Garlic Black Olives Slivered Almonds Organic Whole Wheat Pasta (I know, "Organic"...pffft, it's what Costco sells) Basil Pesto Parmigiano Reggiano Simple and delicious!

Looked at the recipe out of curiosity. I have found over the years, thankfully a bunch of em, that using the fattier Hamburger, I use El Cheapo Wally Mart 73/27 bulk ground beef, gives me a tender, moister meat loaf. Tried adding some cheap ground pork in one I just made a couple of days ago. Was awesome. Like 2 pounds meat, 2 eggs, a little salt,pepper, soy and what'sthisheresauce with some bread crumbs. Oatmeal does sound good though. Oh and lots of finely chopped onion. Tonite was just a chicken salad sammitch and potato salad. Wiped the meat loaf out last night.

Made this last week. Bought Hormel pork fillet and a pound of bacon. Was tricky figuring out how to wrap it at first. But once laid out the wax paper and is was really quite simple using the wax paper to roll the bacon around the pork fillet. Set the oven at 290F and put it in for 3 hours. Was so tender that you did not even need a knife to cut it.

I'm having shark fillets. So, how did you like them? I had shark once that I remember, I believe it was fried nuggets. It's been so long ago I don't remember what it tasted like. I'm sure I liked it, being seafood.

It is a meaty fish. But not like swordfish. The best description for it is midway between alligator and chicken. It's texture is not flaky like most fish. Closer to chicken than fish. Flavor can vary a lot based on what kind of shark and maturity. I prefer Mahi and swordfish as meaty fish. It was fresh caught at a local market and wanted to try it again. First time I had it was OK, but not a preference. I still feel that way. I pan fried it with some olive oil, cracked pepper, lemon, and just a touch of Old bay. As I ate it, felt it needed something and got a small amount of red pepper jelly to the side and that gave it better zest.

Stuffed turkey/chicken breast fil(l)et, "Mediterranean style".
- Make stuffing from minced garlic, minced or grated gingerroot, finely chopped sun-dried tomatoes, fresh green pepper, fresh peppermint, oregano, basil, rosemary, and marjoram. Add two teaspoons olive oil and gently mix.
- Cut pockets into the chicken/turkey breast fillets, and fill them up with the stuffing.
- Wrap two or three rashers of bacon around crosswise to close the fillets up.
- Sear on both sides in a pan for a couple of minutes, then put them in a casserole, adding a little splash of white wine, some shallots, some more fresh green pepper and a twig or two of fresh rosemary; put it in the oven for 25 minutes at around 150C.
Edit: season according to taste. I add salt, freshly ground pepper (I use pestle & mortar) and chili flakes.
