MeneMene, doesn't the "Enlistment" screen offer you all you need?
You have the "Manual enlistment" in the bottom right corner. From here you can choose the nationality, bomber or fighter, the unit, and finally the year, month, and even switch through the days. You will find the "morale" of the unit, and which aces are flying there (and this changes, due to their transfers, leaves, wounded time, or deaths - now, that is historical richness; thank you for all that work, Shredward!).

I'd like more options in the random selection. Like not needing to pick a country. Or being able to say "Give me either a Dr. I or a Pfalz", instead of only being able to pick between scouts and two-seaters.

If you want more randomness for your enlistments, you could simply throw a coin and two dice, MeneMene.
The coin decides: two-seater or scout.
The two dice say:
2, 6, 10 = French
3, 7, 11 = German
4, 8, 12 = British
5 and 9 = American
Saves you a lot of programming - unless you like doing exactly that.
