I'm putting this here rather than in any one of the flight sim forums because it applies to just about all of them and other sims and games as well.
Having labels in cockpits in the original language is unrealistic, unless that is the language of the player.
Let's say that I am playing as a German pilot. We could presume that as a member of the German air forces I would be either A) a native German, or B) someone who can read and write German as part of my immigration and volunteering. As such a person no translation would be required for me to read every label and placard. The manufacturers would not label the cockpit in English or Russian or Japanese and expect me to memorize what they were based on some translated placard that I would have to study.
Or, let's say I was a Soviet in WWII and got a lend-lease aircraft. One of the first things I would do is have someone come up with some Russian language stickers and place them over the switch labels.
Yet for some reason this is a rare option (Black Shark is a notable exception, giving the option of an English language cockpit).

At some point you do need to make concessions for the player. At least some kind of toggle, although I know that's more work than it sounds. Or subtitles.

I could be wrong but didn't the Soviets use English labels on there exported military hardware. I agree with dart it may look authentic but its not very practical.

DCS did it with the Black Shark, and I agree, it makes complete sense. I don't care for English voice acting in shooters (like RO2) because it's largely just there for atmosphere in multiplayer, but for something extremely technical like DCS it's a need. The tool-tip popups are handy but an English cockpit option (not requirement) is even better.

A reason to learn another language.
There was only 16 squadrons of RAF fighters that used 100 octane during the BoB. The Fw190A could not fly with the outer cannon removed. There was no Fw190A-8s flying with the JGs in 1945.

Instrumentation should be in Imperial, not Metric.
English a/c should show boost in 'inches of Hg'.
