I jumped in to suggest Crimson Skies, but Semmern beat me to it. It could be a mixture of flight sim, first person shooter, adventure game. Wild looking flying machines in an open steam punk environment would be a blast.

Something that's been cooking in my head for a long time, a platform for finite state automaton simulation, like SimLife, but on steroids, with many more variables. And the whole thing would be open, with a system for packing up mods for sharing.
The basic structure would be completely reconfigurable. I got the idea in part from SimLife, which came with a text file suggesting how it could be subverted to simulate other things, and gave a brief example of modelling a financial system, using the food in the game to represent money. So, I thought, why not run with this, so you can simulate an entire political economy, with a few hundred thousand automata, representing individual players in a world economy, with variables designating the characteristics of each, including geographic location, national affiliation, wealth, assets, education, skills, etc. Then build rules of interaction, and set the thing going and watch what happens, a sandbox for experimenting with economic systems, and governing methods.
Establish a users forum, and promote the improvement of the structure, and its use in college faculties of economics and political science. Try to engender the growth of a generation of students of systems engineering in society management. I have for decades been of the opinion that economics and government should be branches of systems engineering.

Trespasser. I always say Trespasser! I think it's the atmosphere, at least in the early levels. The sense that you're unravelling, layer by layer, something far bigger than yourself. Secrets better off undiscovered. Bones whose stories will never be told. The consequences for crazy dreamers whose ambitions exceed their capability. Layered with a perfect, haunting soundtrack, the story is advanced by voiceovers from John Hammond (Richard Attenborough.) No expense was spared. Then it all goes to hell because the production team ran out of money and time and published the thing in a rush. So the last levels are little more than a shoot-em-up; Richard Attenborough is sacked; and the enticing, entrancing story and all its promise is literally wedged up a pipe and forgotten. Funnily enough, the fable of idealism vs reality told by the game unintentionally parodies the production team, who befell the same fate. Trespasser was a mangled shadow of what it should have been - just as Hammond's careless ambition did for Jurassic Park and Isla Sorna. Obviously, this should not happen to the remake. R
So the Thunderhawk would come screaming out of the sky at mach ohmygod! and as soon as the struts hit the ground they would rip off. You're trying to apply scientific principles to 40k. Do you not see the problem with that?

Multi-player (co-op) remakes of either F15 Strike Eagle III or Jane's F15 and Tornado, with dynamic campaigns, would be welcome here. I think it's just ridiculous that Jane's F15 wasn't developed with the co-op option in the first place.
