So my HUD is barely readable when set against certain conditions. See the Screens below: Going to Night vision mode helps a bit, but doesn't totally solve the problem. I've set the Intensity setting on the Hud (via the UFC) to max, and the above are the results. Any thoughts?

I tend to find when i first join a game my hud is unreadable until i zoom in and back out to the normal level, don't know why may be a system setting but i just rock my zoom control and seems ok for me after that.
System: Core i7 920 @ 4Ghz, 6GB Patriot Viper RAM, MSI Geforce GTX 670, Samsung 23" Monitor, Thrustmaster Warthog HOTAS, Saitek Pro Flight Rudder Pedals, Thrustmaster Cougar MFDs, Acer15" 4:3 screen for dials and MFDs, TrackIR 5 w/ Trackclip.

So as an update, I've been playing around with SweetFX and DCS, and I believe I can get it tuned just right. A contrast bump and HDR go a long way toward solving the problem. I'll update after more tweaking.

Anyone else notice that when using NVGs, the HUD in night mode (yellow) washes out the NVGs (creating a blurry halo around the HUD markings) where leaving it in day mode (green) does not?

No, i haven't adjusted the brightness. I just thought it funny how the brighter display (to the naked eye) was less bright when the NVGs are turned on. Seems kind of counter-intuitive.

Are you reducing the intensity? Night mode is not necessarily NVG mode. At low intensities I use both HUD colors quite easily. It's surprising how dim you have it when you take the NVG off! Night mode is for the naked eye, not for NVG use. Green has the least impact on NVGs, that's why all the cockpit lighting was modified in the mid 90s on all A-10s (then A models).
