Are the MS office applications compatible across different platforms these days? Simply put, will an iPad read an Excel file created on a Windows based PC? If so, could I work on that file on the iPad and would the Windows PC then be able to use it?

It will, and you can work on it and use it on the PC (I use Pages and Numbers for Word docs and Excel docs, respectively). It is freaking awesome!

Excellent! The iPad seems like it will do all that I want and more. I'll check them out before the holiday weekend is over.
