After pausing sim with external view of my plane and whatever: I can move the view around with my TrackIR, but how can I enlarge or decrease the view for better screenshots?

I thought it was Mouse Right button, but you may need to 'toggle off' your Track IR or re-assign. so not sure. Settings screen here:

i find it easiest to turn of trackir, zoom and pan around wherever to get your shot, then enable trackir to fly again.

Yep, turn off track ir (F9) then click F10 and move and zoom with the mouse.

Dont forget, you can also alter the FOV with the wide,normal and close view(gunsight) keys.
