Awesome.. Hawaii is fantastic. I've had the opportunity to visit 7 or 8 times in the past 10 years (in-laws there).
Place I found and continue to find interesting:
Haunama Bay (sp?) - great for snorkeling with the family/spouse. (very touristy though, so go early when the fish are all out!)
Pearl Harbor - New facilities as of a few years ago, great site, really brings it home as far as the whole event (must for history buffs, they have a new air museum on ford island you can take the tram to see.)
USS Missouri - Great to see the ship, walk around the various decks and get some unique photos ops of the pearl harbor memorial with the ship foredeck in the foreground.
Dole pineapple plantation - ***Not what it used to be** and not worth it IMHO.
If you golf, Luana Hills golf course was pretty nice. (

Walking the Waikiki strip is fun, the beach is ok and is good for sunbathing (very touristy), very low surf..so a good place to learn and don't be afraid to haggle with the individual surf instructors.
The polynesian cultural center is probably worth doing once.
Sea Life Park - Was pretty sad when I saw it, but perhaps they have fixed it up or renovated since then. Not on my recommend list.
Restaurants (my personal favorites): (if you like asian food hawaii has excellent options!, seafood as well obviously).
Alan Wong's - Fine dining, for a special night. Excellent food.

Local:
plate lunch: Rainbow's... Yes each plate can give you a heart attack, but if you want some local flavor this is the popular spot.
Shave Ice - Find a good local shop. (Waiola's is pretty good)
