I may be misunderstanding you but it sounds like you are attacking from below your target. Try BnZ from above your target. It is much easier to adjust your attack when the enemy plane evades. Then after your attack run climb and repeat. It takes a lot longer but you will be able to avoid the gunner for the most part.

From below indeed, They always go into a shallow dive for max speed to their own lines when I get close so whatever altitude I gain on them is lost tenfold in distance..

I tried this a few times, but they usually just roll a tad and that's enough for the gunner to get a shot at me.

I should clarify that I'm currently using the AI mod and really enjoy it as it keeps the gunners from being able to shoot through their own fuselage.

The attack from below technique works pretty well for me. I'm flying full real and I've managed to down 42 DFW's in 26 days flying a N28 for the 94th Pursuit Squadron.

I didn't realize that's what was happening, but makes sense now.
Looks like I need to check out that AI mod at last.
