So the question is: What should I get: 2 extra monitors or a projector?

I thought you meant projector. But was having doubts after seeing all the responses  My original answer is on the first page. I pick two monitors. But, beauty is in the eye of the beholder. Some folks like "BIG" -- as in projector -- or large screen HDTV.

An important consideration will be the resolution differences between 3 big monitors and 1 projector. Your graphic card might have trouble running 3 monitors at high res (I've seen a few guys run into this). But a projector will probably not have super high resolution, which will mean your graphic card will have a lighter load.

I think the resolution will not be a problem with two HD6950 (but please correct me if i am wrong).
A good projector cost about 400-500 euro's. Two new 22" monitors cost 200 euro's and an extra graphic card (HD 6950)230 euro's = 430 euro's. Roughly the same amount of money.
Currently my choice would be two extra monitors but i have some doubts because not every (sim)game supports 3 screen setup.

IL2:CoD does, DCS A-10C does, and even old Microsoft FSX does (have to edit configuration file to get ideal field of view -- set "widefield = 1" or something like that -- then, its perfect in "my" eyes). Some games that don't support Eyefinity using the in-game settings, support it OK if one opens the correct *.ini or *.cfg file and manually enters the screen resolution (e.g. 5760x1200) and, sometimes, enters another line (e.g. Eyefinity = 1, or something that means the same). The fix varies a little bit. But, I was able to figure it out myself just by looking in games I was interested in. There are on-line multi-monitor help sites that give fixes for games. Out of many old and new games I've tried, the large majority work with Eyefinity. My concern with a projector is the "pixelation" and loss of the view to the left and right. I have tried a 54" HDTV and found it wanting because of those factors (though the BIG image was nice -- if it were not so pixelized).

i'd go with Eyefinity over Projectors...
or get both, Projector Eyefinity!
