I would not offset the pillar, it should be done on my extension as you guys have it.
If you just turn the pillar then you will either have a problem of introducing unwanted roll when pulling straight back on the stick or you need to use target to compensate for it but I don't like that method.
As you have the extender I would just do it there and then it is very easy to tweak it to your liking by loosening the top grub screw and turning/tightening again.

With the offset, you can adjust in the TARGET software to counter unwanted roll. So if you offset by 15 degrees, you just add a line to your profile scripts to counter that. There is a function specifically for that to cater for cockpit builders.
I'm just wondering if people find they like it like this for ergonomics, or if it's a detriment to precision to do this..
