While Googling around for images of the real SPAD XIII's cockpit, I quickly came across a site which depicted it as having a fuel tank selector switch.

Now, the SPAD XIII does have multiple fuel tanks, and the switch that this site called the fuel selector switch is indeed in the cockpit in Rise of Flight. In fact, it's one of the switches which the invisible virtual pilot moves when you start the engine. So why no manual control?

The same could be said of the lever just to the right of it, which that site calls the "air pump selector, air pressure release." The V.P. moves it in the sim when you start the engine, but there's no direct control. What should it do, and why can't we control it?

On a slightly different subject, how does the procedure work in a real SPAD XIII? I can't figure out why you'd need to move the selector switch just before the prop is spun, and then return it to the default position when you stop trying. In the sim, try the following: put your mixture to full lean, then hit the Engine Start/Stop key. Your V.P. moves the fuel selector switch and the air pump switch, then the prop is spun by the invisible ground crew. Now after the prop is spun once, hit the Engine Start/Stop key again. Your V.P. moves the fuel selector and air pump switches back to the default positions. Why? I can't see why this would be necessary.

The mixture and radiator management we have modeled is excellent but I wish they had the full systems modeled... I'm sure the switches you see moving are just for show and aren't actually changing anything.

However on a lot of real planes when you shut then down you turn the fuel off as well. That is when you are finished flying.

Most of these planes relied on a postive air pressure in the fuel tank to move the fuel instead of having fuel pump they had an airpump that pressurized the tanks. I think some had a hand pump to pre=presurrize the tank before the main pump was activated. I know some had a small propeller where the wind would turn it to run the pump and I'm sure some had engine driven pumps.

Yes, but this is usually done with the mixture lever, not the fuel tank selector switch.

You shut down the engine with the mixture on most propeller planes. Also on some you turn off the fuel when you park them.
