Which is better for gaming, especially for sims like DCS: Black Shark, ARMA2, FSX, etc

A PC with:

Intel Core i7 920 2.66GHz with 6GB DDR3 1333MHz Tri-Channel memory OR,
Intel Core i7 965 3.20GHz with 6GB DDR3 1066MHz Tri-Channel memory

And which is better after adding the following vid cards:

Intel Core i7 920 2.66GHz with 6GB DDR3 1333MHz Tri-Channel memory and 1.0GB GTX 285 OR,
Intel Core i7 965 3.20GHz with 6GB DDR3 1066MHz Tri-Channel memory and 1.8GB GTX 260

I'm struggling with this decision because the prices are similar. Assume no overclocking and Win 7.

Get an i5 instead with 4GB RAM, save some money on the i7, and buy the larger GFX card.
