1. The opponents are chosen from all available enemy aircraft. So if you fly Entente you get German aircraft as enemies and vice-versa.

There's a pack of RR missions in the mission section of this forum. I downloaded that and then customized it to my liking. You can pick any plane, and you will fly against all of the enemy plane types. The spawns aren't random though.

I was wondering last night, since we can respawn ai planes, what would happen if you put the same triggers/timers that are used on the ai respawn on the player's plane?

What's the ETA on a new patch?
