I have been away from sims a while and am looking to get a good Combat heli sim or 2 and am wonder which have the most online players??

At this point it has probably got to be EECH (modded) and DCS: Black Shark. There are a few 'retro' simmers that play Hind from time-to-time I believe, but the first two I mention are the big hitters.

Don't ask me how you go about setting it all up though!

EECH runs just fine. You can download it cheap at gog.com for XP and Vista, no DRM. Mods work. Good site.

The great Jane's Longbow 2 is still flown, sometimes online. Can't forget this one, and more likely to be online than Hind which has issues due to its age.
