You cannot assign teams to colors from the editor. Only during in-game fighting can the leader do that manually. There are scripting commands to use in the editor, but it's much easier to just assign them from a safe area in the game right from the beginning than to start messing with script commands.
One of Arma's flaws is the fact that it can only handle one leader per group. So if you put down three fireteams as three seperate groups, they will (from the game's perspective) be totally independant of each other. This is good for MP Coop games. If you put down three teams and make them all one group, you can control all the teams - but only the main leader can issue orders (no sub-leaders) and there is no way other than colors to organize them. This is only good for SP games.
The only current way to acheive anything different is through the use of the High Command module which takes a bit of configuration and doesn't work 100% like you would expect. It does, however, help when it comes to having "subordinate-leaders" and is something you may want to look into after learning the basics.
