So when I run missions, I seem to be having some sort of a problem with sound. In the cockpit, I hear no engine sound when looking forward. If I pan to the left or right, I will hear the engine quietly. Sometimes when I look forward again, the sound will stay with me, but it sounds "off pitch"...

For the record, I'm also having the same issue with the Wings Over Europe after installing the Desert Storm mod.

Could this be an issue in the sound settings? ie. sound channels, etc.?

I have it, too, sometimes. It's old age.

But in your case, it is the sound settings. Check the game but also check your Control Panel. I think we aftermarket developers have missed a trick that TK has not. We will try to figure it out. I was going to get a hearing aid until I read your post.

I think sound is primo in YAP. Maybe it is in the patched up version of WOV, but the sound of AAA going off all around you and the ping and thunks of small arms and larger fire on your ride, top notch.
